The Champagne Sommelier
This exceptional Champagne takes its distinguished name from two specific plots, 'Chaillot' and 'Gillis', jewels nestled upon the Ecueil hillsides. It is from these hallowed grounds, specifically vines planted way back in 1963, that this elixir originates. Imagine, vines now boasting over sixty years of wisdom, digging deep to produce Chardonnay grapes of remarkable concentration, hinting at almost exotic muscatel nuances as harvest approaches. Naturally, such a treasure is not an everyday affair; its production is rightly limited, reserved only for vintages demonstrating truly compelling character. It possesses such inherent equilibrium that it is offered exclusively in the Extra Brut style, showcasing its purity with minimal dosage.
Now, let us speak of its crafting. This is a pure Blanc de Blancs, 100% Chardonnay, vinified with meticulous care entirely in oak barrels. It rests there for around six months, gaining complexity and texture through patient bâtonnage (lees stirring). Crucially, malolactic fermentation is intentionally blocked – a masterstroke to preserve that vital nerve, that crystalline freshness which is paramount to its identity.
Observe it in the glass: a profound golden hue, illuminated by a perlage of exquisite finesse. The bubbles ascend with harmonious grace, forming a delicate, persistent cordon at the surface.
Approach the nose: It speaks with confidence, yet elegance. Subtle, beautifully integrated notes from the oak cradle the vibrant, forthright aromas. We find confit citrus, the unmistakable scent of damp chalk – pure minerality – and enticing whispers of candied orange peel.

It unfolds with beautiful complexity, confirming the aromatic promises with seamless harmony. Balance is the mot juste here; everything is in its place, leading to a persistent finish where intriguing notes of licorice linger gracefully.
