Falstaff
Delicately fruity, some tangerine, butter. Soft and somewhat pleasing sweetness on the palate, medium-fine mousse, even quite sweet, but also with a chalky minerality, salty. Has two sides. The finish is very ripe, almost with a hint of cherry laurel. Add to that the sweetness. But then also mineral.
Andreas Larsson - Tasted
Bright light golden colour with vivid young bubbles. Pure nose offering a gentle toast, nutty notes, pale stone fruit, ripe citrus and fresh butter. Nice grip on the palate, bone dry with a fresh and lively backbone, mild creaminess, pure chardonnay flavours with some autolytic complexity and nice persistency.

De Saint Gall is the flagship label of of major co-op Union Champagne, the wealthiest co-op in the world, and a massive force of 1860 members, founded in 1966. This boutique wine comes from 1er cru villages Versus, Bergères les Versus, Avize, Clamant, Oger, Mesnil-sur-Oger, Villers Marmery in the Côtes de Blancs. This chardy had 36 months on lees, and was dosed with 8g/L dosage from a solera that goes back 40 years. Lemon blossom, pear skin, green apple is bedded by a deep chalk base, and centered around a round apple core. The finish trails off into chalk dust. Impressive showing.

This is a generous and gentle style of Blanc de Blancs, creamy on the nose, with hints of honey and acacia, a delicate beeswax filigree character. There's a sweetness on the palate, very ripe yellow plum and peach, but zippy lemon soon asserts, giving a relatively soft and crowd-pleasing style, with decent length and without doubt a harmonious balance.

With this Blanc de Blancs, this cooperative house showcases the soul of Chardonnay, the king of grapes in this cuvée. From the moment it's opened, a fine and persistent effervescence offers a dazzling visual spectacle. On the nose, aromas of white flowers, mangoes, and ripe citrus intertwine with more subtle notes of warm brioche and fresh almond. On the palate, the magic happens immediately. A lively and crystalline attack reveals a delicate yet assertive structure. The minerality, a signature of the region's chalky soils, blends harmoniously with a lemony freshness and a touch of salinity. As the wine develops, complex flavors of juicy pear, candied zest, and marzipan enrich a silky, almost creamy texture. The remarkably long finish leaves a vibrant memory. Serve at 10°C. Delicious as an aperitif and ideal to accompany fish with mousseline sauce, shellfish, crab cakes, white fish sashimi, or grilled scallop skewers.
