The Estate Since 2023, Denis Bunner has officially been the new cellar master of Maison Bollinger. Son of winemakers, with a grandfather who was a founder of a cooperative, Denis Bunner has wine in his veins! Although he handled his first bottles of crémant in his grandfather's cellar in Alsace, Denis Bunner had no idea that bubbles would become the center of his life! During his studies, he met Michel Valade, a researcher at the Comité Interprofessionnel des Vins de Champagne. Impressed by his work, he spent 10 years by his side, during which he met Gilles Descotes. About to become the cellar master of Maison Bollinger, the latter found in Denis Bunner the ideal assistant, in 2013. Denis Bunner is a jack-of-all-trades, particularly skilled in the invaluable task of restoring the reserve of old vintages, which he is entrusted with. A titanic task that intimately binds him to the brand and its timeless values: Pinot Noir, its 165ha estate vineyard, its home-made barrels, its reserve magnums, and time, which only quality controls. The Wine (Base 2019, disgorgement 2023) Created in 1911, this emblematic cuvée has managed to gain in precision while retaining its vinous and refined style. In the context of climate change (which, for number enthusiasts, translates into a decrease in total acidity of 1.3 g/H2SO4 and an increase of 0.8% abv in alcohol over 20 years), the technical evolutions brought by the duo Gilles Descotes - Denis Bunner have preserved and improved this characteristic blend of density and subtlety that defines the wines of the Maison. I suppose if it's good enough for James Bond, it's good enough for you. Special Cuvée is classic for Bolly: powerful, presence, prestige. It is a blend of 60/25/15 pinot noir/ chardonnay/ pinot meunier from 300+ cru, over 85% of which is Grand and Premier Crus, and with a hefty dose of 50-60% reserve wines up to 15 years old. A portion of this cuvée will have been fermented in oak casks, with the majority in stainless. It spent a minimum of 3 year sur lattes before being disgorged with 8 g/L. Ripe red apple, cherry brioche, and fragrant bread dough is cut with sharp green apple acidity, and coloured with toasted hazelnut. There's a bitter cherry twist on the end that counters the heft in the fore. Classic, predictable, and safe.
Falstaff
Medium golden yellow. Fine bubbles. Candied citrus zest on the nose, light stone fruit, green apple, subtle hints of pastry and honey. Slender and elegant on the palate with a sweet centre and very fine, creamy mousse. Harmonious and salty-citrusy on the juicy finish. Hardly better value for money.
Robert Parker Wine Advocate
Like its rosé counterpart, the latest release of Bollinger's NV Brut Special Cuvée is showing especially well, bursting from the glass with aromas of honeyed apples, crisp stone fruit, buttery pastry, ripe lemons and fresh walnuts. Medium to full-bodied, fleshy and vinous, with a deep core of beautifully ripe fruit, racy acids and a pillowy mousse, it's a charming, characterful wine that proves that Special Cuvée is firmly back where it belongs.
James Suckling
A polished palate of fine bubbles with pears, light bread dough and caramel undertones. Medium-bodied with pretty toasted-oak and vanilla flavors. Refined finish. Touch of quince and grapefruit with dried apples. Base wine 2021 plus nine different vintages. A blend of 61% pinot noir, 25% chardonnay and 14% pinot meunier. Drink now.
Jeb Dunnuck
The NV Champagne Special Cuvée (60% Pinot Noir and based on the 2021 harvest) pours a bright yellow/silver hue on opening and reveals a fresh and actually more mineral-driven profile on the nose than I was expecting, revealing layers of fresh raspberries, brioche, wet stone, and orange blossoms. The palate is medium to full-bodied and classically rounded, as you would come to expect from this house, but it retains good tension and a silky, chalky texture, with an ultra-fine mousse, salinity in its notes of grapefruit zest and almond, and a creamy texture through the finish. Its very well-styled and is going to drink well over the next 10 years. They always try to have 8-10 vintages the blend, the oldest being 18 years (15 years when it goes into the bottle). 8 grams per liter dosage.
For a long time, Bollinger only allowed private visits, but they plan to open a visiting center in 2027 in the center of Ay and are also going to increase production from their current 4000 barrels to 5500. In addition, theyre going to start adding information to the label of their Special Cuvée.
