Pale to medium gold. Bubbles are small and densely-packed, rising in an even stream. This has a beautiful nose: fantastically rich and toasty with lots of herbs and baked apple pie aromas, as well as peachy fruit and hints of darker, caramel notes. Some old wine character here, it has a richly-foaming mousse and good structure. Long, savoury and elegant, this is a cracking NV Champagne. Highly recommended.

Apricot, dried apple, dried lemon, shortbread and almond on the nose. Medium- bodied with sharp acidity and fine bubbles on the creamy, biscuity and dry palate. Very fresh and balanced. Drink now.
Gismondi on Wine
Bruno Paillard, founded in 1981, is a family-run operation and owner of thirty-two hectares of land that cover some of Champagne’s most important vineyards. The house style is sculpted from over 40 plots of land, bringing complexity via terroir. They store their reserve wines in both tanks and small oak barrels for at least three years, and uniquely blends the multi-vintage reserve wines a year before assemblage. The Brut Premiére Cuvée NV is the house wine, and Bruno Paillard’s flagship champagne. The delicious non-vintage blend of 45/33/22 pinot noir, chardonnay, and meunier are multi-vintage given its 25-48 percent use of reserve wines dating back to 1985. The final blend gets six months of ageing on the lees before bottling, and three months in the cellar post-disgorgement. The nose is vibrant, and the vibe is all red fruits streaked with tangerine, honey, and dusted minerality.

Tasting note
Appearance: The golden straw colour reveals a high presence of chardonnay and the exclusive use of the first pressings. The fine bubbles are due to a strict selection of the best grapes, perfectly controlled temperature in the cellar and very long ageing.
Nose: The primary aromas reveal the citrus fruits of chardonnay: lime and grapefruit. Then the red fruits aromas of pinot noir appear: redcurrant, raspberry, morello cherries. When left to open up in the glass, the wine shows hints of dried fruits, sometimes exotic, from pinot meunier.
Palate: Lively and vivacious, thanks to a low dosage, the aromas on the nose are echoed in the mouth. Primary flavours of citrus, almonds, and toasted bread, very soon joined by redcurrant jelly but also dark fruits like cherry, fig and blackberry.
Whilst the wine opens up in the glass, and gets warmer, it expresses light plum and pear flavours. The palate is full, quite long with a very clean finish. The Première Cuvée Champagne is an excellent aperitif. It matches divinely with cheese (Brie de Meaux, Camembert, aged salers), poultry and shellfish.
