Sourced from 36 parcels in Oger and Mesnil-sur-Oger and kept on the lees for 48 months, the NV Blanc de Blancs Grand Cru Extra Brut (Disgorged 09/2016) opens with an intense and complex, very mineral and Burgundian bouquet with chalky, toasty and bright fruit aromas intertwined with whole grain and even oyster flavors. On the palate, this is terribly fresh and intense, very young and straightforward. There is a rich and almost sweet extract on the palate that gives texture and length. The finish, however, is cleansing, pure, fresh and very, very long. This is a great tensioned and chalky Blanc de Blanc from the Côte des Blancs, and its aging potential should be enormous.

Dried jasmine, white peach, lemon curd, chalk and pie crust on the nose. Medium- bodied with sharp acidity, fine bubbles and a fresh, zesty and peachy palate. Excellent balance. Drink now.

The Bruno Paillard Blanc de Blancs is born from 36 blocks of Grand Cru Chardonnay inside the Côtes des Blancs. The effervescence is lighter than in other champagnes, thanks to a Bruno Paillard-specific bottle fermentation technique. During the bottling before the second fermentation, they use less added yeast than the Champagne standard, creating a slightly lower finished pressure. As a result, an added delicacy and creaminess seem to absorb and show off its refined flavours of lime and almonds dusted in salinity. I love the minerality and finesse that flows throughout this bubble. Well worth the money.

Appearance: Very pale and shiny with green tints. The effervescence is lighter than in the other Champagnes thanks to a less powerful bottle fermentation.
Nose: First aromas are citrus – lime and grapefruit – followed by white flowers. While opening in the glass, a touch of almond and toast appears.
Palate: After a lively attack, this wine reveals complex notes ranging from citrus to white flesh fruits, marked by the distinctive minerality of the chalk. Fresh and lingering finish.
Blanc de Blancs Grand Cru matches beautifully with shellfish, especially oysters. It can also accompany fish or an entire meal if there aren’t any particularly spicy or sweet dishes.
